Is rhubarb a vegetable? A fruit? Or an ornamental plant?

 

Scientific name: Rheum cultorum

Hardiness zone: 3-8

Mature Size: 2-4 feet wide, and 2-3 feet high.

Exposure: Full sun.

Days to harvest: Harvest only one or two stalks the first year. Take a small harvest the second year. Harvest as needed the third year.

Description: Victoria rhubarb is a big, leafy plant. It is grown for it's tart edible stalks, but also makes a great ornamental plant. The stalks are pink at the bottoms and green towards the tops. The leaves themselves are not edible. They contain toxic oxalic acid crystals. Rhubarb is a perennial and requires a dormancy period so it does well in climates with cool or cold winters.

Planting: Simply put your little rhubarb plant in loosened soil. Keep moist, but well drained. Remove flower stalks when they appear so that the plant will direct its energy towards growing big, juicy stalks. For ornamental purposes, let the flower stalks grow and watch your rhubarb plant turn into an impressive garden wonder!

Eating:

***Rhubarb Pie***

Ingredients:
4 cups chopped rhubarb
1 1/3 cups white sugar
6 tablespoons all-purpose flour.
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Directions:
Preheat oven to 450 degrees F (230 degrees C).
Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.
Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 minutes. Serve warm or cold. Yummy!
